Insanity Day 17

Well, today’s workout was Pure Cardio and Cardio Abs. I used the X-box One’s fitness app for the Pure Cardio to see if I could beat my old score… which I did! I actually got a 5 star rating on it! First time ever for that specific workout! So, that’s 5 stars for two workouts this week! AHH! Yay for non-scale victory!

Insanity Day 16

Day 16 of Insanity for me was the Plyometric Cardio Circuit. I didn’t workout in the morning like I usually do, but I had seemed to have more energy in the afternoon when I did this workout. I also got a 5 star rating on the X-box One’s Fitness app. Yay for non-scale victories! I have only ever gotten 4 stars on any of the Insanity workouts featured on the app. I also posted a comparison picture on my instagram as well as my Faecbook to help me keep going in my journey. 70 lb difference. Feeling more confident each day. 🙂

Insanity Day 15

Whoa… I am a little behind in my posts here! Ahh! Need to stop letting that happen. I have been doing Insanity every day according to my calendar. So… no worries there! Anyway, Monday was Day 15 of Insanity. I did the Fit Test as the calendar said. Here are my results as well as my first day results to compare:

Switch Kicks – 89 (started at 80)

Power Jacks – 47 (started at 43)

Power Knees – 101 (started at 85)

Power Jumps – 31 (started at 25)

Globe Jumps – 10 (started at 8)

Suicide Jumps – 15 (started at 10)

Pushup Jacks – 17 (started at 14)

Low Plank Obliques – 65 (started at 50)

So, making progress. I’ve only lost 1 lb since starting, but I am obviously getting stronger cardio wise. I will measure myself at the end of next week and see. I try not to weigh myself too much, so the next time I will do that will be at the end of next week also.

Insanity Day 6

Well, this time for the Plyometric Cardio Circuit I utilized X-box One’s fitness app. I find that it actually helps me out a lot. It pushes me to keep going and work harder. I love the challenges that randomly pop up during the workout and you either go up against your old scores or against other women (or men if you’re a dude) in your age range. I find that I push myself really hard during these challenges, sometimes so much that I have to take a wee break to catch my breath after.  Anyway, felt like throwing up again in today’s workout, but kept pushing through!

 

Zucchini Brownies

So, the past two weeks I’ve made a healthier version of brownies for my family. Needless to say, they were a hit. It’s an egg free recipe too.

ImageINGREDIENTS:

1/2 cup applesauce
2 small or medium bananas mashed
1 and 1/2 cups sugar
2 tsp. vanilla extract
1/2 cup cocoa powder
1 and 1/2 tsp. baking soda
1/2 tsp. salt
2 cups finely shredded zucchini
2 cups all purpose flour (you can use alternative flour like wheat, but it will make the density a little bit different)
1/2 cup walnut pieces.

I actually add dark chocolate chips to it to make it more chocolately. Use them at your discretion. Sometimes I don’t add the nuts either.

DIRECTIONS:

Preheat oven to 350 degrees F. Grease and flour an 9 x 13 inch baking pan. In a large bowl, mix together the applesauce, mashed bananas, and sugar. Add vanilla and cocoa and mix together. Then add baking soda, salt, and zucchini and mix together. Add flour and walnuts and mix together (or the chocolate chips). Spread evenly into a prepared pan. Bake for 25-30 minutes until brownies spring back when gently touched.

Insanity Day 4

Well, today was day 4 of the Beachbody program Insanity. The workout for today was Cardio Recovery. Now, don’t let that name fool you! It’s been so long since I have done it and I had forgotten that it still actually makes you sweat.  I needed a good stretch today and it definitely delivered that.  My inner thighs, calves, and shoulders are sore. I love that feeling because I know that this program is working! I hope it gets me over the plateau that I have hit. I think once I finally start this new job in about two weeks I may invest in Shakeology again. It definitely made my nails and hair healthier. It was quite tasty too! We will see what happens int he future. 🙂 Looking forward to tomorrow’s workout!

Insanity Day 3

Well, today I woke up feeling ever-so-sluggish, but after I ate a little bit of breakfast I got enough energy to start day 3 of Insanity. It was definitely a bit harder than the workout yesterday. I sweat a lot and did take a few breaks here and there (again, with a pushup move!), but that’s okay! I also felt like throwing up during the beginning. I guess I was really pushing myself. I also used my X-box One’s fitness app to do today’s workout. Luckily, the app has a few of Insanity’s workouts on there.  ImageToday I did Power Cardio and Resistance. I like using the fitness app on the X-box One because challenges pop up from time to time and you try and beat other women’s scores that are in your age range. I did beat a few of the challenges, but some I did not.  I am sure with time and completing more and more of these workouts I will be able to beat all of the challenges one day! Super stoked to do that.

NO More EXCUSES!

Okay… the past couple months I have just made a ton of excuses when it came to me working out and eating right. I would do good for a little while, then stumble again. I would workout most days though, but then I would eat like crap and basically cancel out what I was trying to do.

So, now… I am determined more than ever to get my fitness and eating habits under control.  I am determined to start and finish the Insanity program. I actually started it yesterday and started eating better as well.  I really need to keep posting here, Instagram, and maybe Facebook.  I feel that doing that helps me hold myself accountable.

No more excuses.  I am STICKING to this.  I did get a new job that starts next month, but I won’t let that stop me either.

No Fry Fries Recipe

Usually when my family decides they want fries for dinner I turn to Gwyneth Paltrow’s No Fry Fries.

They’re really simple to make and are very yummy! Check out the recipe below!

INGREDIENTS

  • 2 large russet potatoes (2/3 lb each), peeled
  • 2 tablespoons olive oil
  • 3/4 teaspoon coarse sea salt

PREPARATION

Heat oven to 450°. Cut potatoes in half horizontally; cut each half into 1/3-inch-thick fries and place in a bowl of cold water. I usually put ice cubes in the water as well. I soak them for at least one hour, changing the water every 20 minutes.

Remove from water and dry thoroughly. Toss with oil and sprinkle with salt. Place fries on a cookie sheet. Roast until browned and cooked through, turning occasionally, 25 minutes.  Cooking times may very though. Just check them from time to time and cook them to your liking.

I also use Cajun spices to make them have a kick. 🙂

Nutrition facts:

175 calories per serving, 7 g fat (1 g saturated), 27 g carbs, 2 g fiber, 3 g protein
